Among Everest Cuisine’s renowned staff is Lhakpa Sherpa, who migrated to America as a teenager. Her deft dumpling-folding skills remain unmatched, yet beyond technique lies profound wisdom imparted through storytelling. Guests delight in Lhakpa sharing folktales, medicinal plant knowledge, and cultural nuances behind beloved dishes through lively discussions amidst preparation.  “Food is how I stay close to my roots despite living overseas. Everest Cuisine feels like family,” she shares.

For Tamu Lama, migrating to pursue education uncovered a passion for merging her Tibetan upbringing with global influences. As Sous Chef, she oversees an inventive menu featuring tradition with modern twists. Her buckwheat momos stuffed with pickled shiitakes and arugula pesto awaken robust flavors, or the apricot crostata featuring cardamom-poached quince transports swiftly to Ladakhi mountain meadows. “This kitchen allows me to travel through my heritage ingredients in new, exciting ways,” Tamu delights.

Weaving amidst the bustle emerges Line Subba, infusing Nepali street food with Himalayan cultural significance through artful presentations and guided explanations. Originally from Darjeeling, in this role, she rediscovers childhood memories and shares treasured folkways like the auspicious associations within seasonal ingredient-focused thali platings nurturing body and soul. “Here I find my identity again each day,” Line expresses with a smile.
